Sandwich Overload


This title was previously called “Salad on Toast” but how boring is that?  So I spun it and thought of it as an open faced sandwich with veggie overload!  Now THAT’S exciting!  Here is this yummy little lunch idea:

Make a salad however you’d like to.  I usually do this when I’m just having a boring old salad with just chicken or something.  Toss the salad and chicken with your dressing (choose plain balsamic vinegar for 0 calories and sugar). 

Toast a piece of bread and top is with guacamole.  Or not.  Whatever.  I like it that way but it’s still good if you don’t have guacamole. 

Dump your salad on top of the bread and cut bread bites with each salad bite!  This is such a yummy lunch!

Italian Chicken Pasta Toss


Italian Chicken Pasta

6 oz uncooked bow tie pasta (about 3 cups)
2 plum tomatoes, diced
1 small onion, chopped
1 medium zucchini, sliced
1 small yellow or red bell pepper, cut into thin strips
½ pound boneless, skinless chicken breasts cut into 1-inch strips
2 t. olive oil
1 large garlic cloves, pressed
½ c. frozen peas
1 t. Italian seasoning
1 t. salt
¼ c. grated fresh parmesan cheese (optional)

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, dice tomatoes and chop onion.  Slice zucchini.  Cut bell pepper into thin strips and chicken crosswise into 1-inch strips.
  3. Heat oil in skillet over medium-high heat until hot.  Press garlic into skillet using a garlic press.  Add chicken.  Stir-fry 5 minutes or until chicken is no longer pink, turning occasionally.  Reduce heat to medium.  Add onion, zucchini, bell pepper, peas, seasoning and salt; stir-fry 2 minutes.  Add tomatoes; heat 1-2 minutes, stirring gently until heated through.  Remove from heat.
  4. Stir in warm pasta.  Sprinkle grated parmesan cheese over pasta.  Serve immediately.

Here is another recipe from “Squeaky Gourmet”, the cookbook I have the pleasure of reviewing.  This grilled chicken had such a refreshing and light flavor and the whole family loved it!  Even my kids ate every bite I gave them. 



1/2 cup chopped fresh basil (4 T. dried)
1/2 cup canned low sodium chicken broth
1/4 cup lime juice
1 T. honey
2 t. dijon mustard
2 garlic cloves-mashed
1/2 t. salt
dash pepper

Put all of this in a large ziploc with 4-6 thawed chicken breasts.  Allow the chicken to marinate for at least 3 hours.

Heat your grill to medium heat, then turn down your heat and cook the chicken over low to medium depending on how hot your grill is.  Cook until there is no pink in the center.

Bbq Ranch Chicken Salad


Here’s an easy salad idea for you.  Grill up some chicken with any seasoning (I used “Kickin’ Chicken).  Throw that and your toppings on your salad.  I topped my salad with bell pepper, red onion and chicken.  For the dressing stir together equal amounts of bbq sauce and low fat ranch.  I used 3/4 T. of each.  This is such a yummy, different tasting salad!  Perfect for a light lunch!

Chicken Veggie Salad


I wanted to use up some chicken today but wasn’t really feeling the traditional salad vibe.  So, I got out all the veggies I had in my fridge (cucumber, orange bell pepper, celery, onion, and brocolli) and cut them up into chunks.


Then I added my chicken.


And topped with some low fat salad dressing.  (This is actually homemade Cafe Rio salad dressing – 12 cals/T.  Seriously.  The recipe is here.)


It was a great alternative to a regular old salad!


A few updates:

-Core4 is going great.  I ate quite a bit less food yesterday than I normally do on a Sunday, yet I felt full and satisfied even still.  This is great news for me!
-I have 8 assessments for my next boot camp today!  Ah!  Crazy!
-I am getting my Lasik Surgery on Wednesday!  Two more days of these aweful glasses!
-My to do list is about two miles long today so I need to get cracking!

Nutty Chicken Salad


Oh my gosh.  This salad is so good!  It has all the elements of a good, summery salad.  It’s got a light flavor, strawberries, swiss cheese, egg, bacon, and lots of other yumminess. 

Salad ingredients:

  • Romaine lettuce
  • Grilled Chicken
  • Red onion
  • Raspberries or strawberries
  • Swiss cheese, grated or thinly sliced
  • Bacon, cooked and crumbled
  • Pecans, chopped

Dressing Ingredients:

  • 1 t. oil
  • 2 t. white vinegar
  • 3/4 t. low fat mayo
  • 3/4 t. sf maple syrup
  • 3/4 t. brown sugar

The dressing has about 70 calories.  The calories in the salad depend on the amounts of the ingredients you put in.  This salad is a great flavor combination!  I hope you try it!



Well, the results of the “One Plate Challenge” are in.  And… I forgot my camera.  I’m so sorry.  I couldn’t go home to get it.  You’ll have to just trust me on this one. 

Here’s what I had:

  • A little bit (1/4 cup?) of a really good bean salad with avocado
  • The same amount of a yummy pasta salad
  • 1 1/2 chocolate chip cookies
  • 1 really good brownie with cool whip and strawberries
  • 1/2 of a yummy pudding-ish dessert with a graham cracker crust

I admit, its more that I planned but I could’ve eat much more so I was proud of myself.  I left feeling like I had had some good treats but not overly stuffed and I was happy about that, too.  I am also happy that the crazy week of a million bbq’s is over and I can go back to eating normally without all the temptations to indulge!  I like indulging every once in a while but this last week has been a bit ridiculous.

I will attempt the “One Plate Challenge” another time when I have my camera with me!

Today is a day to get a bunch of stuff done around the house.  I have all sorts of laundry, kitchen cleaning, spring cleaning/getting things sorted for the garage sale, and other things to do.  The kids slept in until 9am, which is completely crazy for my kids, and were outside playing with neighbors by 9:30am.  I love summer!  Now, if it would just get a little bit warmer so we can start hitting the pool I’ll be good to go!

Smothered Chicken


We have had this chicken for dinner the last two nights and it is wonderful!  I make it a little healthier by using low fat cheeses, turkey bacon and just a little bbq sauce on my piece instead of having it dripping in sauce.  I paired this chicken with potatoes and veggies.  I hope you guys like it!


2 boneless, skinless chicken breasts
Garlic Powder and seasoned salt, to taste
1/2 c. low fat shredded cheddar cheese
1/4 cup chopped green onions
3 slices turkey bacon, cooked and crumbled
1/4 cup tomatoes
BBQ sauce

Cut chicken in half lengthwise so that it is thin.  Sprinkle with seasonings.  In a skillet brown the chicken for about 4 minutes.  Top the chicken with BBQ sauce (as much as you want), cut up bacon, green onions, tomatoes and cheese.  Cover and cook until chicken is done and cheese is melted.  This takes about 10 minutes.  I served this with mashed potatoes (for the fam) and veggies.   If you want you can top with a honey mustard sauce.  I love this sauce and like to use it as a salad dressing too.

3 T. mayo
3 T mustard
1 T honey
1/2 T lime juice
sprinkle ginger

(The sauce has 30 cals/T, just fyi)


Hey friends!  The big kids are gone at friends houses right now and the baby is asleep!  Ahhh… bliss.  I should really be taking a nap right now!  Today was Caleb’s last day of kindergarten.  I actually cried as we were leaving his school.  Wierd, I know.  I normally wouldn’t call myself the type that kids sad that kids are growing up.  I wasn’t sad his first day of kindergarten.  I was excited for him and he was excited.  But a little part of my today was sad that this year flew by so fast and my big boy is going to be in 1st grade next year!  We were walking out of his school (I was wearing sunglasses I might add) and I said, “Caleb, can you believe you’re done with Kind-(voice catch)-ergarten?”  That was the extent of it.  I’m not talking heaving balling.  Just a little sadness that he is growing up so quickly. 

Anyway, he had his cute little class presentation this morning.  Then I went to work.  My mother in law is coming in a few hours and we’re just going to play tonight.  I was supposed to work by my two appointments canceled!  Perfect timing!  I never would have canceled THEM but I’m not complaining that THEY canceled.
