Watch out!! This cake definately falls under the category of “Free Meal”. And what good fitness girl doesn’t have the occasional free meal right? I make this every year on Easter and only on Easter. It is so good! But after you eat enough of it you’ve had your fill for a while. Seriously, though, this is the best from scratch carrot cake you will ever have. Period. I promise. So I just wouldn’t be a good friend if I didn’t post the recipe for you all. So here goes.
Sift together:
- 2 cups flour
- 2 t baking powder
- 1 1/2 t baking soda
- 1 t salt
- 2 t cinnamon
Mix in:
- 2 c sugar
- 1 1/2 c oil
- 4 eggs
Mix well. Stir in:
- 2 cups grated carrots (3-4 carrots)
- 1 8 oz can crushed pineapple, drained – save 2 t. of juice for frosting
- 1/2 cup chopped pecans
Pour into a greased 9×13 pan. Bake at 350 degrees for 35-40 min. When the edges start to pull away from the pan, it is done!
Frosting for the cake:
- 8-12 oz low fat cream cheese
- 1/2 cup butter
- 2 t reserved pinapple juice
- 1 lb powdered sugar
- 1/8 t salt
Blend cream cheese and butter. Add salt and pineapple juice. Add about a half pound of powder sugar a little bit at a time while mixing. Continue to add more powdered sugar to taste. We usually use about 3 3/4 cups.
Hey! Don’t hate. I warned you that this recipe was not “good for your body”. But it is definately good for your soul. 🙂 Just make sure you eat really healthy the next couple of days!

Happy Easter everyone! It’s only 9am and we’ve already woken up, done easter baskets (Caleb got more magformers and Brynley got a tinkerbell dress), had an easter egg hunt and had a really good breakfast casserole! Watch for the casserole recipe later this week. It was way good and way healthy! Now we’re getting ready to go to Church and then head over to my parents. Wow! That DOES look good! I’m actually glad that I don’t like to bake… otherwise I’d probably make this and down it all! LOL!
I love to make carrot cake. My recipe doesn’t call for pineapple, I’ll have to try this one.
