Fresh Cucumbers and Onions

This is my favorite summer snack!  I have it pretty much every afternoon when I’m getting hungry for dinner but it’s not quite time yet.  The vinegar does something for my appetite and helps me get through that hard snacky time of day.
All you do is chop up some fresh (preferably from the garden!) cucumbers [...]

Tropical Fish Salad

This salad is one of my husband’s favorite dinners but we cooked the fish a little differently tonight and it was great.
We always use orange roughy because we love the light flavor and lack of real fishiness to it.  We sauteed it in a teeny bit of coconut oil, garlic, lime juice and chopped onion.  We [...]

Guacamole and Hummus Salad

I am known to eat the same thing over and over again when I find something I love.  My breakfast for the last, probobly, month has been this.  This yummy salad has been my favorite lunch as of late.
I make a big salad with whatever veggies I have on hand.  Today it was romaine, peas and [...]

Bbq Ranch Chicken Salad

Here’s an easy salad idea for you.  Grill up some chicken with any seasoning (I used “Kickin’ Chicken).  Throw that and your toppings on your salad.  I topped my salad with bell pepper, red onion and chicken.  For the dressing stir together equal amounts of bbq sauce and low fat ranch.  I used 3/4 T. [...]

Chicken Veggie Salad

I wanted to use up some chicken today but wasn’t really feeling the traditional salad vibe.  So, I got out all the veggies I had in my fridge (cucumber, orange bell pepper, celery, onion, and brocolli) and cut them up into chunks.

Then I added my chicken.

And topped with some low fat salad dressing.  (This is [...]

“Leftovers” Salad

Hey guys, I’ve got to be quick tonight as I am so tired and ready to get off to bed!
Around 3pm I was getting a little snacky feeling.  Not super hungry, perse, but snacky so I got out my trail mix snack bag and munched on that.

This afternoon was spent checking things off my to [...]

Cobb Salad

This is such a good salad.  The dressing is so light and fresh tasting.  And the toppings and flavors go perfectly together!  It is a really great lunch or dinner for that matter!
Here are the toppings I put on:

1 slice turkey bacon
1/2 hard boiled egg
1/2 T. bleu cheese
2 oz chicken
1 oz avocado

You can use as [...]

This salad was really good and pretty different from anything I’ve tried recently.  And I love honey mustard dressing and am excited to now know how to make it!  Here’s the salad combo:

Romaine lettuce
Mandarin Oranges
Pineapple (I used canned tidbits)
Avocado
Chicken (2 breasts, sliced in half so it’s thinner)

Mix the following together and rub on the chicken about [...]

Balsamic Chicken Salad

This is great to have for lunch on a day when you are trying to eat light.  Maybe you ate too much the day before (or this last weekend which was the case with me today!) or maybe you’re going out to eat tonight and want to compensate with a light lunch.  I used the [...]
