This title was previously called “Salad on Toast” but how boring is that?  So I spun it and thought of it as an open faced sandwich with veggie overload!  Now THAT’S exciting!  Here is this yummy little lunch idea:
Make a salad however you’d like to.  I usually do this when I’m just having a boring [...]

Here is another recipe from “Squeaky Gourmet”, the cookbook I have the pleasure of reviewing.  This grilled chicken had such a refreshing and light flavor and the whole family loved it!  Even my kids ate every bite I gave them.

Bbq Ranch Chicken Salad

Here’s an easy salad idea for you.  Grill up some chicken with any seasoning (I used “Kickin’ Chicken).  Throw that and your toppings on your salad.  I topped my salad with bell pepper, red onion and chicken.  For the dressing stir together equal amounts of bbq sauce and low fat ranch.  I used 3/4 T. Smothered Chicken

We have had this chicken for dinner the last two nights and it is wonderful!  I make it a little healthier by using low fat cheeses, turkey bacon and just a little bbq sauce on my piece instead of having it dripping in sauce.  I paired this chicken with potatoes and veggies.  I hope you [...]

Malibu Chicken Sandwiches

We got the canopy all sent up this afternoon.  One of the rods was bent though so we ended up exchanging it tonight.  It’s not the classiest thing but it will be good to take to the pool and use in the backyard when we have picnics or bbq.  The kids loved playing underneath it.  [...]

Today we are taking a little trip down memory lane.  I take you back to Monday when I made two yummy things but couldn’t post them because my camera ran out of batteries!
That afternoon my creative juices were flowing and I blended up a little bit of heaven, otherwise known as Chocolate Coconut Almond Butter.

Wow, [...]
